Here's how it worked for Billy's Coffee, a coffee shop in Port Said.

Before

When I met with Billy's founders, the real story was already there, a personal cause behind their zero-sugar sweet coffee recipe. A natural gift for storytelling. A shared love of motorcycles. None of it had anything to do with "specialty coffee." All of it led somewhere that category could never have taken them: a shop beside one of Port Said's most storied landmarks, in a city full of history nobody was pointing a coffee lover toward.

"Specialty coffee" was true. It just wasn't the size of what they'd actually built.
